YUZU, Japanese citron, into the buckwheat: cold noodle.
Made by fresh green YUZU during early Autumn.

《MATSUTAKE NO DOBIN-MUSHI・・・3,600 YEN or above》
A whole MATSUTAKE mushroom cut into the thin stripes, steamed in DOBIN, an earthenware teapot. Together with HAMO meat, shrimps and ginkgo nuts are put into the bottom of the teapot, added some broth and cooked until they are heated. Enjoy the ingredients and also the flavorful soup. An exceptionally autumn delicacy. Please ask for today’s price and origins.
